This document is for information and guidance only. It provides practical and non-statutory support to help understand and comply with the rules on:

  • beef, sheep and pig carcase classification
  • deadweight price reporting
  • beef and veal labelling

This guidance is not legal or professional advice. It does not replace or change the statutory requirements set out in the Regulations. These remain the legal authority.

If there is any difference between this document and the Regulations, the Regulations take precedence. If you are unsure about your legal duties, you should read the relevant legislation or seek independent legal advice.

This guidance uses the spelling carcase and carcases. In some Welsh regulations, the spelling carcass and carcasses may be used. Both spellings have the same meaning throughout this document.
