To work in a slaughterhouse that handles or slaughters animals for human consumption, you must have a certificate of competence (CoC) for the animal species and activities you will work with.

If you do not have a CoC, you can apply for a temporary certificate of competence while you train under the permanent supervision of a full CoC holder.

To get an activity code:

  1. Find the reference letter for the species, for example, ‘A’ for cattle.

  2. Find the activity number in the tables, for example, ‘11’ for using a penetrative captive bolt device.

  3. Join the reference letter and activity number together to create the activity code, for example, the code to use a penetrative captive bolt device on cattle is ‘A11’.

Create an activity code for each species and activity you will work within the slaughterhouse.

Red meat

The reference letter for the following species is:

  • A - for cattle, including water buffalo and bison
  • V - for calves
  • B - for horses, includes mules and donkeys
  • C - for sheep and goats
  • D - for pigs, including farmed wild board
  • E - for large game, including feral wild boar, deer, alpacas, llamas and guanaco
